It's ok as long as it is not spoiled milk.
Spoiled milk is infested with bacteria and can be detrimental to your health. When making cheese you are separating the milk proteins from the milk. Those proteins would taste awful if your mother was using spoiled milk.

The expiration date on the bottle is the usually the date in which the milk is not optimal for drinking, not necessarily that it is spoiled.
Cheese curds are what happens when milk makes cheese.
If milk is sour, it becomes a form of yogurt, without added cultures.
Why not use it up and not throw it out? I also know if people who have dumped their spoiled milk, or expired, into their gardens or plants, diluting it with additional water!
I seldom can finish a whole jug of milk myself, and will end up dumping it anyway.
