I cannot understand why my center and east panels disappear when I resize my window...!
Looking in IE they dont even appear in the first place.

Why are you specifying heights in CSS? You should do that in your layout config.
Also, have you considered using Ext.Viewport or Ext.ux.plugins.FitToParent (http://extjs.com/forum/showthread.php?t=28318), so your layout will resize with the browser?
